Mejillones en Vinagreta



Try this with crusty bread and Manzanilla or dry white wine.
  • 500gr cleaned mussels
  • 100ml olive oil
  • 1 green pepper diced small
  • 1 onion diced small
  • 2 tomatos diced small
  • 2 cloves chopped garlic
  • 200ml white wine
  • 1ooml sherry vinagar
  • 1 tsp tomato paste
  • salt and pepper to taste
  1. saute peppers, onion, tomatos, garlic
  2. add mussels and saute
  3. add wine, vinagar and tomato paste
  4. steam until all mussels are open
  5. remove mussels from shells and mix with sauce
  6. chill, then add salt, pepper and more olive oil to taste
  7. place mussels back on half-shell and top with some sauce
